Raw Recipes



Last night's dinner theme was 'RAW' Foods.

It was quite a challenge for me because firstly, it's winter and I felt like something warm that had been stewed for hours... and secondly because I don't normally have meals where everything is raw.

But I love a challenge.

So last night we went to Mr Fabulosity and G's house and I started prepping my three-course meal.

The first course was the most popular and was a raw take on pad thai.

Ingredients:

  • half a punnet of baby marrows (about 6), sliced into ribbons with a peeler
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 1 250g bag of raw almonds (you can get these from Woolworths), roughly chopped up
  • A small bag of mixed bean sprouts (also, Woolworths)
  • 4 Spring onions, finely sliced
  • 4 to 5 pepperdews, thinly sliced
  • 1 small red chilli, very finely chopped
  • a nice handful of fresh coriander, roughly chopped, plus more for garnishing
  • juice of one lime
  • olive oil
  • salt and pepper

Layer baby marrows in a large salad bowl, add peppers, almonds, sprouts, spring onions, pepperdews, chopped coriander and chilli. Toss altogether. Squeeze lime juice over and drizzle olive, then toss again with salt and pepper to taste. Garnish with coriander and serve. Will make four large bowlfuls.

For the main course I sliced up fresh Norwegian salmon to make sashimi and served it with a avocado and red grapefruit salsa with touches of coriander and fresh lime juice.

For dessert I simply peeled and sliced up some orange slices and drizzled them with slightly warmed raw, organic chocolate spread from Honest Chocolate, then refrigerated them until hard.

Overall it turned out quite well and we all enjoyed a super food veggie boost after our busy party-filled weekends.
